Turkey & Swiss Chard Soup

Ingredients

  • 3 cloves of organic garlic
  • 1 large yellow onion
  • 1 bundle of organic Swiss chard
  • 1 pound of organic ground turkey or organic pasture raised ground chicken
  • 2 pints of organic bone broth (chicken or beef)
  • 3-4 stalks of organic celery
  • 1 pound of organic chickpea/lentil pasta
  • half inch piece of fresh ginger
  • 3 tablespoons avocado oil
  • optional: grated parmesan cheese for toping

  • pepper
  • red pepper flakes
  • organic garlic powder
  • organic onion powder
  • organic chili powder
  • organic turmeric powder
  • organic cumin

Of course! Feel free to substitute regular pasta. We opt for gluten free alternatives and especially ones that offer extra nutrients! I don’t often eat lentils, despite their multitude of health benefits, so using pasta made from 100% lentil flour is a great way to get those nutrients in! It is also a great way to add more protein to your meal 🙂

Nope. Chicken broth is made in just a few hours, whereas bone broth cooks for 12-48 hours! This means more time to extract all the nutrients from the vegetables and bones. For this reason, bone broth typically has a much higher protein content. Additionally, bone broth has more added benefits like collagen, electrolytes, vitamins, and minerals! We always opt for bone broth over chicken broth whenever possible.

This recipe typically fills a medium size dutch oven. This makes enough for about 4-6 big bowls of soup!

Step 1: Prep your veggies

Mince 3-4 cloves of garlic

Chop 1 onion

Wash celery stalks and chop celery into 1/4 inch chunks

Chop/cut Swiss chard into pieces, I usually do this with a scissor!

Step 2: Sauté

Add 3 tablespoons of avocado oil to a warm dutch oven or large pot 

Add garlic and sauté for 1-2 minutes on low heat until the garlic becomes fragrant

Add celery and continue to sauté, increasing to medium heat. Add the chopped onion and cook until the celery and onion are tender

Step 3: Cook the turkey

Add in the ground turkey to your celery and onions and break up the turkey as it cooks using a silicon spoon or spatula

Add 1/4 teaspoon of cumin, chili powder, turmeric, garlic powder, and onion powder and mix until well combined

Cook turkey completely 

Step 4: Add the bone broth

Once the turkey is cooked, add 2 pints of bone broth. (You can also use chicken stock or water but I opt for bone broth for added protein!)

Increase to high heat and bring to a gentile boil

Step 5: Cook the pasta & Swiss chard

Once the bone broth is boiling, add the pasta and stir into the bone broth and cook according to the box instructions (usually 5-8 minutes)

If need be, you can add a cup or two of water to completely cover the pasta as it cooks

Add a sprinkle of red pepper flakes, salt and pepper to taste 

Once your pasta is cooked, lower heat to medium and add your chopped Swiss chard

Continue stirring until Swiss chard is cooked

Grate in your fresh ginger and stir

Step 6: Finishing touches

Serve yourself a bowl and top with a sprinkle of Parmesan cheese and  more red pepper flakes for an extra kick!
